Trentino DOC Grapes: Aromatic Traminer 100% of the hilly areas facing west in the municipality of Avio in the Valle dei Molini and on the hills of the municipality of Ala in the Pozzo basso area,

the harvest takes place in the last ten days of September and it is the time of harvest of this grape, the harvest is carried out strictly by hand, making appropriate selections. A part of them is placed on the plateau and then slightly dried, the vinification takes place with the rapid pressing and heating of the crushed grapes, which will stand in the press in the absence of oxygen for about 12 hours, making sure that the cryo-maceration takes place to extract at best all the aromatic notes present in the grapes, followed by a soft pressing with long times. The must obtained is clear and fragrant, after a stop it is sent to fermentation, which will be long and at a temperature of 16 degrees. After the first racking, the wine is placed in stainless steel tanks and born with frequent batonages. The part of the grapes put to rest is pressed at the end of November and the wines are placed separately in small wood and then proceed with the final assembly.
